Having a baby almost ensures that you’ll have bananas lying around. And for my young feeder it’s the perfect texture to learn to master chewing. And, with having bananas around they’re bound to get black before I’m ready to eat them. Around the holidays my mom is notorious for baking a plethora of mini banana breads & pumpkin breads–my absolute favorites. And although I love them, they probably aren’t the best recipes to introduce to my little one…just yet. I decided to give my mom’s recipe a shake down to make it a bit more “baby friendly.”
Here’s my mom’s tried and true recipe (super moist):

I had a couple areas I wanted to tackle: 1) the sugar 2) adding in nuts, but not chunks and 3) boosting the fiber.
Needless to say it was a huge success and one I’ll be making for my little one often and giving as gifts to all my favorite mommy friends this season! Bake these up in wide mouth, pint-sized mason jars and give as gifts!
- ½ cup canola oil
- ½ cup dates, pits removed
- 2 eggs
- 3 bananas, mashed
- 3 Tbsp milk
- ½ tsp vanilla
- 1 cup almond flour
- 1 cup all purpose flour
- ¾ tsp baking powder
- ½ tsp salt
- Preheat oven to 350 degrees. Spray a loaf pan or mason jars with cooking spray.
- In a food processor, pulse dates until crumbly and small to make a date "sugar."
- In a medium mixing bowl whisk together canola oil and dates. Add in eggs and whisk for 1 minute. Add in mashed bananas, milk, and vanilla and whisk for an additional minute. In a separate bowl whisk together almond flour, all purpose flour, baking powder, and salt.
- Make a well in the center of the dry ingredients. Pour wet ingredients into the dry ingredients and mix just until blended (do not over mix, lumps are a good thing with quick breads).
- Pour mix into prepared loaf pan and bake for 1 hour or until center is done.
